I am trying to find a class or prestege class that adds your strength score to your armor class. Also, if it happens to increase unarmed damage as well, that is all the sweeter.

I am not sure if any class or PRc can do that at the moment. To clarify, are you seeking a class that allows the replacement of dexterity modifiers that are substituted with strength and at the same time offers and added damage bonus to unarmed combat from the same strength modifier?
One of two feats can take care of that without need of a new class (or variant). other than that idea, I still am not sure if any class exists that accommodates the use of the Strength modifier to that length.
I decided to make one of the feats, perhaps it will suit your needs:
Safeguard Aptitude [GENERAL]
Prerequisite: ARMOR PROFICIENCY (Light) , BAB +1, Dex 15.
Benefit: When you wear a type of armor with which you are proficient, you may use your Strength modifier instead of your Dexterity modifier when determining armor class. All other restrictions and penalties still apply.
Special: A fighter may select Safeguard Aptitude as one of his fighter bonus feats.
Natural Armor is always considered light.

Actually, I mean the class will allow you to add your Str modifier to your AC when unencumbered, like the wisdom of monk and ninja. I can add Int, Wis, Cha, Con and Dex to AC, I just need to find a class that allows str.

I don't know of any class that adds strength to AC, maybe something in Tome of Battle as I don't have that book. As to the chaotic monk, try the Drunken Master, it doesn't state that you have to be lawful to take it. If fact you don't have to stay lawful to keep your monk abilities (the only classes that state you lose abilities for an alignment change are: Paladin [LG to anything else] Barbarian [changing to any lawful loses the rage ability] Knight [ changing to none lawful loses challenge abilities] Dragon Shaman [must stay close in alignment or change dragon type] and Hexblade [going good loses all supernatual abilities, melee is an extra ordinary ability though!]) Now you can't advance the following classes with alignment changes, but you don't lose abilities: Monk, Samurei, Warlock, and Dread Necromancer.

Allowing a character to use Str as a bonus to AC seems dangerous as Str already gives you so much in 3.x. It would have to have some limitations to make it playable.
Another route, not that I know what you character idea is that you need this for, would be to give a PrC the ability to use Str to negate the penalties of heavy armor as it goes up in levels. Just a thought.

At level 8 the knight base class begins to get the ability to ignore armor movement penalties, I think it increases again at level 13?
