The Unwavering are completely and totally devoted to the Pharaoh, whose tomb they guard. They will pursue desecrators throughout the tomb.
Combat
The Unwavering are hand selected from the Pharaoh’s finest warrior guards. They relish combat and track foes throughout a tomb complex, till the desecrator is eliminated. They are armed with masterwork Khopesh and the equivalent of chain shirts.
Fear (Su): At the mere sight of an Unwavering, the viewer must succeed at a Will save (DC 20) or be paralyzed with fear for 1d4 rounds. Whether or not the save is successful, that creature cannot be affected again by that Unwavering’s fear ability for one day.
Damage Reduction (Su): Because of the extra care taken during the embalming process, unwavering enjoy a damage reduction of 5/+ 1.
Undead: Immune to mind-influencing effects, poison, sleep, paralysis, stunning, and disease. Not subject to critical hits, subdual damage, ability damage, energy drain, or death from massive damage.

One more time, I will try and explain a few things. First they are based on an 8th level warrior (pg 110 DMG for the table), secondly undead use Charisma for Fortitude saves. Unholy Toughness can be found (full description) pg 146 MMIII. Also if you read the descriptive text it clearly states that the unwavering are created from warriors.

Ok if you do read through the whole thing you will find Unholy Toughness, fully listed out. Also Monster Manual III is core material as per what Wizards of the Coast have said. Sorry.
